Six NCC Students Visit Emeril in NOLA
The good times did, indeed, roll when six lucky Northampton Community College students went to visit and work in Chef Emeril Lagasse's New Orleans restaurants. They were winners in two separate competitions held earlier in 2015 -- one for culinary arts, and one for hospitality management.
The group arrived on Saturday, November 28, and were treated to a culinary tour of New Orleans by chefs from Emeril establishments NOLA and Delmonico's. On Sunday, their work began. Each student went to one of the three restaurants to intern for the day. The culinary students worked with chefs to prep and "mise en place" recipes such as wild mushroom tortelloni, boudin balls, and foie gras torchon. The hospitality students worked with front-of-house staff to learn party planning, reservation systems, seating, service, and wine service.
The group was accompanied by NCC Chef/Instructor Susan Roth, who has plans to incorporate versions of some of the dishes she experienced in New Orleans into the Hampton Winds menu in June of this year.
The winners were John Abela, Billy Mushock and Sean O'Donnell (culinary); and Kyle Lewis, Katie Morris and Robert Van Thiel (hospitality).
